Shiitake Sweet Potato Hash

A breakfast favorite!


  • 6 oz Shiitake Mushrooms, sliced
  • 1 medium white sweet potato
  •  1 medium sweet yellow onion
  • 1 tbsp garlic powder
  • 1 tbsp dried oregano leaves
  • Salt and pepper
  • 1 tbsp bacon fat, olive, or coconut oil

Grate the sweet potato using a cheese grater. Set aside.

Chop the onion into small pieces. Set aside.

In a saucepan, place the oil or fat and let it heat up. Add the mushrooms and onion. Cook until the mushrooms reduce in size, and the onions caramelize.

Add the grated sweet potato. You may need to add a few tablespoons of water to hydrate the sweet potato as it cooks.

Stir occasionally and allow the potato to cook until soft. Add spices to taste.

Serve with fried eggs and bacon for a delicious savory breakfast!
