We have worked diligently for more than a decade to produce shiitake mushrooms that hold up to the following Top Hat quality standards:
- Mushroom Cap
- Firm, plump, dense
- Dark tan to brown in color
- Slightly dry to the touch
- Slightly curled along edge
- White gills on underside
- Mushroom stem
- Length should be no longer than 1 1/2 times the diameter of the cap.
Picked at perfection, chilled to above freezing, delivered fresh to wholesale markets across North America.
Buyer beware: Shiitake mushrooms that are transported by boat from outside the United States are at least 2 1/2 - 3 weeks old before they are unloaded and then sold as "Fresh".
